A few years ago, Jovnil Cáceres Dios bought a small piece of land not far from his first farm, Finca Nacimiento, which is probably already well known to our followers. He wanted to grow more coffee and plant rare varieties such as Geisha. This year is the third year that the new farm has been producing Geisha coffee, and as expected, the quality has improved compared to the first two harvests. This harvest has a more floral and intense flavor than the previous years.
Although not as expressive as the Geisha coffee purchased from the Caballero family in southern Honduras, it is still a great coffee with delicate, subtle floral and citrus flavors.
This lot in particular has a slightly different processing method than before. We asked Hovnil to depulp the coffee cherries the morning after they are picked, rather than the afternoon of the day they are picked. This allows the coffee cherries to start fermenting slightly before the depulp, and the hulled coffee is then dry fermented in tanks for 24 hours before being washed. This process gives the coffee a more intense fruity flavor without over-fermenting.
In my experience, the quality of the coffee tends to improve as the tree ages, so I believe this coffee will only get better in the future.
