Cadefihuila (Decaf)

Cadefihuila, a coffee producer cooperative based in the Huila region of Colombia, was founded in 1963 and is one of Colombia's most historic and largest organizations, currently comprising approximately 3,500 producers. With the core philosophy of "being as close as possible to the producers," it currently operates 38 purchasing points, having established a system where even the most distant farms can reach the nearest point within about an hour. Although operating costs increase due to the need to assign dedicated staff to each point, the cooperative prioritizes creating a structure that allows even small-scale producers with annual production of less than 1 ton to continue coffee production. Additionally, it provides interest-free loans, training in cultivation and processing, and technical guidance, and all profits, excluding the minimum costs required for organizational operations, are returned to the producers. This coffee was decaffeinated in Colombia using ethyl acetate (EA), a 100% natural ingredient extracted from sugarcane. In the cup, it offers a clean and smooth sweetness with flavors of brown sugar, almond, caramel, and dried fruit.
