Anaerobically fermented, then washed, at Danche washing station in Gedeb, Ethiopia. Wild floral aromatics open the cup, the soft sweetness of peach iced tea holds the middle, and a black-tea note lingers in the finish. A light, clean cup led by florals and tea.
The processing is unusual. Only ripe cherries are handpicked, hand-sorted and floated, then de-pulped and sealed in tanks to ferment for 48 hours without oxygen. After fermentation the parchment is washed twice in clean water and dried on raised beds for 15 to 20 days. The sealed ferment builds complexity, and the washing step that follows keeps the cup clean and light.
