Darling

This coffee is fermented anaerobically and then finished as a washed coffee at the Danche washing station in Gedeb, Ethiopia. A bright aroma like wildflowers opens first, the gentle sweetness of peach iced tea anchors the cup, and the lingering finish of black tea stays long. A light, clean cup led by floral and tea-like notes.

The processing method is distinctive. Only ripe cherries are hand-picked, sorted and float-washed, then pulped and fermented for 48 hours in sealed tanks without oxygen. The fermented parchment is rinsed twice with clean water and then dried on raised beds for 15–20 days. The sealed fermentation builds complex aromas, and the washed process that follows leaves the cup clean and light.
