Las Trojas, at 2,300m in Huehuetenango in north-western Guatemala, is a small coffee farm run by Rodrigo Garcia and his family. The name comes from the "Troja", the traditional storehouse once used in the area to keep harvested corn. The structures are now hard to find, but the long history and way of life of the region live on in the farm's name. Rodrigo is a second-generation producer who carries on the family's coffee-growing tradition with his parents and brothers. Coffee has long been the family's essential livelihood, but a new chapter began when the brothers joined VICAFE, a local youth cooperative. By learning about quality control and production methods and applying them on the farm, the family keeps working to produce higher-quality coffee than before.

At Las Trojas only fully ripe cherries are selectively harvested. The cherries are depulped the same day, fermented for about 24 hours to break down the mucilage, and then washed clean. They are dried slowly on patios and in greenhouses to keep quality consistent. This traditional washed process focuses on expressing the delicate flavours and clean texture of the Bourbon variety. Despite the practical difficulties of rising production costs and labour shortages, Rodrigo cares about creating an environment in which the next generation can keep growing coffee. He aims not just to maintain the farm inherited from his family, but to pass it on through better quality and sustainable production.

In the cup, bright fruit notes reminiscent of ripe apricot and cherry come through, followed by the gentle nuttiness of almond and a soft vanilla-like sweetness in harmony. A Guatemalan Bourbon with a clean, delicate texture and a calm, lingering finish.
