This coffee is an excellent example of how complex and compelling a washed Pacamara can be, with its tart red fruit complexity, stone fruit nuances, and structured acidity. There's a reason Los Pirineos has won so many awards with their Pacamara coffee.
Often, Pacamara can have a slightly herbal or oniony flavor, which I agree with, but there are no unpleasant notes in this particular coffee. The Pacamara varietal was distributed before it was stabilized as a new variety, leading to a lack of uniformity and many different variants being planted. Perhaps this is why there is such a wide range of flavor profiles from this varietal.
In my experience, Los Pirineos's Pacamara is consistently delicious, with very few off or unpleasant flavors. I believe this is because Los Pirineos was actually one of the farms involved in the development of Pacamara, and they were able to select good lineages during that process. Diego now produces high-quality certified Pacamara seeds, which he also sells to other farms.
