Honduras is the largest coffee producer in Central America, ranking third in Latin America and sixth globally. Coffee is deeply embedded in the country, with cultivation in 15 of its 18 departments. Intibucá, in the southwest, is a well-known coffee-producing region, and most of the farmers there are small-scale. Wilmer Alexis Grau Montoya is one such farmer. His farm is divided into several plots along a mountainside at an altitude of approximately 1,670m. Wilmer runs one of the largest farms in Pozo Negro, equipped with a small processing facility and African beds. He is a central figure in the region's coffee production, processing not only his own coffee but also that of his mother, Joaquina, and neighboring farmers. Traceability is crucial for high-quality coffee. The project led by coffee agent Nordic Approach in this region separates, processes, and mills coffee by lot for each producer, ensuring that higher premiums are returned to producers based on quality. This allows roasters to discover coffee that reflects the unique character of a single producer. Wilmer has not only improved processing but also actively invested in equipment, using the premiums from coffee sales to build a larger, new flotation tank for cherry sorting before processing.
